A Must-Have Recipe for National Salsa Month


May is National Salsa Month, and there’s no better time to cook up a delicious, fresh salsa for your friends and family at the campsite. These two unique recipes made from fresh ingredients you can gather at a local farmers’ market are exactly what you need to celebrate.

Spicy and Fresh Tomato Salsa

What you’ll need:

  • 6 Roma tomatoes (chopped)
  • 2 jalapenos (seeded and minced)
  • 2 roasted jalapenos (skinned and chopped)
  • 1 red bell pepper (diced finely)
  • 1/2 red onion (finely chopped)
  • 1 tablespoon olive oil
  • 1 lime (juiced)
  • 2 dry ancho chiles (finely chopped)
  • Chili powder, salt and pepper to taste
  • Fresh cilantro, parsley and scallions to taste

Preparation instructions:

  1. Combine all of the fresh ingredients in a bowl. Mix thoroughly.
  2. Place the bowl of ingredients in the refrigerator for at least 12 hours to let the flavors fuse.
  3. Serve with your favorite tortilla chips.

Restaurant-Style Salsa

What you’ll need:

  • 1 28-ounce can whole tomatoes (with juice)
  • 1/2 cup fresh cilantro leaves (or more to taste)
  • 2  10-ounce cans diced tomatoes and green chiles (Rotel)
  • 1 clove garlic (minced)
  • 1/4 cup chopped onion
  • 1 whole jalapeno (quartered and thinly sliced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon sugar
  • 1/2 whole lime (juiced)

Preparation instructions:

  1. Place the diced tomatoes, cilantro, whole tomatoes, onions, jalapeno, garlic, salt, cumin, sugar and lime juice into a blender or food processor.
  2. Pulse the blender until the salsa is the consistency you prefer (10 to 15 pulses).
  3. Test the seasonings with a chip to ensure they’re to your liking. Adjust seasonings if needed.
  4. Refrigerate the salsa for at least 1 hour before serving.
