March is National Poultry Month, and there’s no better place to cook delicious new dishes than on the road in your RV. This mouthwatering recipe for baked garlic parmesan chicken is exactly what you need to spice up your boring travel meals. Even better, the recipe takes just 45 minutes to prepare for six people, so you won’t have to spend all day in the kitchen.

Baked Garlic Parmesan Chicken

Prep time: 15 minutes, Cook time: 30 minutes

What you’ll need:

  • 2 tablespoons olive oil
  • 1 clove garlic (minced)
  • 2/3 cup grated Parmesan cheese
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon ground black pepper
  • 1 cup dry bread crumbs
  • 6 boneless, skinless chicken breast halves

Cooking instructions:

  1. Preheat your RV’s oven to 350 degrees and lightly grease a baking dish, preferably 9 by 13 inches. Consider lining the dish with tin foil before greasing it to keep the chicken moist and make clean-up easier.
  2. Stir the olive oil and garlic together in a bowl.
  3. In a separate medium-size bowl, mix the Parmesan cheese, pepper, basil and bread crumbs together until mixed thoroughly.
  4. Dip the chicken breasts, one by one, into the oil mixture then the bread crumb mixture. Be sure to coat each chicken breast thoroughly.
  5. Arrange the chicken breasts in the baking dish and top them with the rest of the bread crumb mixture.
  6. Bake the chicken breasts for 30 minutes in the preheated oven or until the chicken juices run clear.
