Part of camping is cooking on the grill, however, there are some things that some would never think of cooking over the grill – open or closed. With the right temperature, you can cook just about anything. You can even bake in a covered grill.

Eggs on the Grill

You’ll need a muffin tin for this recipe. If you want over easy, over medium or over hard eggs, simply grease each hole in the muffin tin then crack an egg into each hole. If you use bacon fat, you’ll get a much better flavor. Cook the eggs for about 2 minutes over medium heat or until they are done how you want them.

You can also make scrambled eggs with your favorite ingredients. Scramble the eggs, and then fill each hole about half way. Add chopped onions, ham, bacon, sausage, peppers, mushrooms and cheese to the eggs. Turn the grill on medium heat and cook them until they are firm.

Foil Packs

Foil pack dinners are great when you want to cook something with a lot of ingredients. Lay out one 12-inch by 12-inch square of heavy duty foil for each person. Divide your favorite meat and vegetables onto each of the squares. Drizzle the meat and veggies with oil or put a dollop of bacon fat on the top. Sprinkle with your favorite spices. For poultry, you might use garlic powder, salt, pepper, a bit of blackening spice and poultry seasoning. For beef, you can use the same, but drop the poultry seasoning. Add onion powder if you don’t use onions. For pork, use the same spices, but add a bit of cumin.

Bring two opposite halves of the foil together and crimp them. Fold up the ends. Poke a small hole in the top of the foil pack. Cook on medium heat – or if your grill has a thermometer, about 350 degrees Fahrenheit – for an hour. You might have to let it go a bit longer if you are cooking on an open grill.
