Breakfast On The Go


Camping in a motorhome is rewarding and fun for all. But cooking can sometimes be a daunting task if you have a large group to feed. You need something that you can prepare the night before and just slide in the oven come breakfast time. Your OKC RV dealer has you covered with a couple delicious recipes. The Anytime Bake Casserole is your best friend! This recipe serves 6 and can be refrigerated overnight before cooking.

  • 1lb of sausage or ham cubes
  • 6 eggs
  • 1 teaspoon salt
  • 1 teaspoon dried mustard
  • 2 cups of milk
  • 6 slices of crumbled rye or potato bread
  • 1 cup cheddar cheese

Cook and crumble the sausage and drain. Mix together eggs, salt, mustard and milk into a large bowl. Cover an 8×11.5 casserole dish with cooking spray. Layer your crumbled bread on the bottom of the casserole dish followed by layers of sausage and cheese. Pour the egg mixture over the top. Sprinkle with parsley flakes and cover with foil. Refrigerate 1 hour or overnight. In the morning, preheat your oven to 350 degrees and bake for 45 minutes.

Another delicous and fun breakfast, if you have the time, is Orange Madness. The kids will love it!

  • 4 Oranges
  • Pillsbury Grand’s orange sweet rolls
  • Campfire

Cut your oranges into halves and scoop out the insides and either save to enjoy with your breakfast or toss. Grab the orange sweet rolls and put one into each orange half. Put the oranges on a baking sheet or something that you can throw on top of the campfire. Cover the baking sheet with tinfoil and place the cooking sheet on top the fire. The rolls will start to rise as they bake. Once the rolls have risen, pull them off the fire. If you have a hot fire, keep a watchful eye so they won’t burn. The best part; add the icing on the rolls and enjoy a sticky, flavorful, yummy and oh-so-delicious breakfast!
