When you are on the road in your RV, whether for the weekend or for a long road trip that might take several months, you need some easy recipes in your tool kit for those days or nights when you just don’t feel like making something that takes forever.

No matter which RV you have – or which RV you choose from Leisure Time RV for your first RV, these recipes are easy and you don’t need special cooking equipment and ingredients that take up precious space in the RV.

Foil Bake

  • 12- to 18-inch piece of foil
  • 2 slices of bacon
  • 1 medium potato, cut into bite-sized pieces
  • 1 medium carrot, cut into bite-sized pieces
  • 1 small onion, cut into bite-sized pieces
  • 1 serving of kielbasa or smoked sausage, cut into bite-sized pieces
  • Salt and pepper
  • Garlic powder
  • Cayenne powder (optional)

Each set of ingredients makes one serving. Place the bacon on the bottom. Pile meat and vegetables on top of bacon. Fold the long sides of the foil together and crimp. Roll the ends up to seal the meal. Cook over coals or in the oven about an hour or until potatoes are tender and meat is thoroughly cooked.

Easy Banana Cream Pie

No dinner is complete without dessert. You don’t need many ingredients for this no-bake banana cream pie.

  • 1 graham cracker pie crust
  • 1 3.5-ounce box banana pudding
  • 1 large banana
  • ¾ cup Cool Whip

Cut the banana and layer it in the bottom of the pie crust. Mix the pudding as directed on the box. Fold in the Cool Whipped. Pour the mixture into the pie shell. Let set in the fridge for at least 5 hours.

Garnish with whipped cream or Cool Whip and banana slices.

Quick Chocolate Cream Pie

If chocolate is more your “thing,” you can also make a quick and easy, no-cook chocolate cream pie.

  • 1 Chocolate cookie pie crust
  • 1 3.5-ounce box chocolate pudding
  • ¾ cup Cool Whip
  • Chocolate shavings or chips

Mix pudding as directed on package. Fold in Cool Whip. Pour into crust and let set in fridge for at least 5 hours. Garnish with whipped cream or Cool Whip and chocolate shavings or chips.
