Favorite Thanksgiving Recipes

When you’re traveling in your RV over the holidays, you may consider eating out; however, you can still prepare your favorite Thanksgiving recipes “at home” if you want. Depending on the size of your oven, you just may have to go “small.”

Since a larger whole turkey won’t fit into an RV oven unless you have a residential stove/oven, you’ll have to find either a smaller turkey or you can roast turkey breast. Use the same rub whether you are making a whole turkey or just the breast:

  • Salt
  • Pepper
  • Badia Redfish Seasoning
  • Poultry seasoning
  • Garlic powder
  • Onion powder

Liberally sprinkle the spices over the turkey and into the stuffing cavity. Cover and bake as directed for your size turkey. If you are using just the breasts, cover both sides with the seasonings. Place the breasts on a cookie sheet in a roasting pan. Cover and bake as directed for the number and size of the breasts.

Sweet Butternut Squash

Peel, seed and cube a butternut squash. Boil the cubes until they are soft. Drain the water then put the cubes back into the same pan. Over low heat add 3 tablespoons butter and ¼ cup light brown sugar. For a little kick, add a dash or two of cinnamon and a dash of nutmeg. Mash the squash, ensuring that all spices and the butter is well incorporated.

Apples and Cinnamon

Even if you have apple pie on the menu, you can make apples and cinnamon as a side to go with the rest of dinner.

  • 8 apples, peeled, seeded and cut into eighths
  • 1 tablespoon butter
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves

Heat the butter and apples over medium-low heat. When the butter melts, add the sugars and spices. Cook, stirring frequently, until the apples are soft.
