Whether you are home or camping, some pie recipes are easy to make. You could even make the filling ahead of time and keep it in the freezer until you’re ready to use it, especially if you’d rather make a bunch of filling ahead of time with fresh fruit. Even pudding pies are easy enough to make in an RV.

Apple Pie

Filing:

Core and peel about 3 pounds of apples. The apples should be sweet and hard. If you use a soft apple like a Delicious, the filling will be watery. Slice the apples into wedges.

Add the apple wedges, about 1 cup white sugar and 1 cup brown sugar to a medium pot. Simmer until the apples are al dente, stirring frequently. If you prefer a sweeter pie, add a bit more sugar.

Mix 2 tablespoons cornstarch with 2 tablespoon cold water. Stir the cornstarch into the apple mixture and let it come to a boil, stirring constantly so as not to burn the apples. Turn the heat down and let the mixture simmer about 5 minutes, stirring constantly. Remove from heat when the mixture thickens. Let the mixture cool.

Once the mixture is cool, you can freeze it or use it immediately in a pie. Place the mixture in an unbaked pie shell, add a top crust and crimp the pie together. Cut a few slits in the center of the pie to vent the steam. Coat the top of the pie with egg wash. Sprinkle it lightly with sugar. Bake at 350 degrees Fahrenheit for about an hour or until the pie is evenly browned.

You may have to cover the crust with foil to keep it from browning too fast.

Easy Banana Cream Pie

  • 1 package banana-flavored jello pudding
  • 1 envelope unflavored gelatin
  • 1 tub whipped topping
  • 1 large banana sliced
  • 1 graham cracker pie crust

Instructions:

Prepare the jello as instructed on the package, except add the unflavored gelatin. Refrigerate for 30 minutes. Line the bottom of the pie crust with banana slices. Fold the whipped topping into the pudding. Pour the pudding mixture into the banana-lined crust. Refrigerate for at least 2 hours before serving.
