Once you pick up your new RV at Leisure Time RV, you won’t be able to wait to get on the road. But first, you have to pack up. Plan your meals ahead of time – this way, you’ll have everything you need and won’t have to interrupt your relaxation time to go to the store.

Potato and Ham Boats

  • One large baking potato per person, already baked with skin on
  • Sliced ham
  • Cooked bacon
  • Cheese slices (your choice)

Cut slits into the potato from narrow side to narrow side. Make the slits about 2/3 of the way through.

Layer some cheese, bacon and ham, and then stuff a layer in each slice. Place the potato on a piece of foil large enough to wrap it. Dot the top with five or six small pats of butter. Wrap the foil around the potato. Place on the grill for about 20 minutes until the potato is heated through and the cheese is melted and gooey. Serve with your favorite potato toppings.

Skillet Breakfast

This serves 4 to 6.

Special “tools:” Large cast iron skillet with a lid

  • 16 ounces of your favorite sausage
  • 26 ounces of your favorite hash browns
  • 12 eggs
  • 2 cups shredded cheddar cheese
  • 12 ounce package of bacon
  • Salt and pepper

Cook the bacon until it is well-browned and crispy. Remove from the pan, but do not dump out the bacon fat. Crumble the sausage into the pan. Cook over high heat until the sausage has browned, ensuring it stays crumbled. Remove the sausage. Do not drain the skillet.

Add hash browns to the skillet and cooked until browned. Meanwhile, scramble the eggs. When the hash browns are done, add the sausage. Pour the scrambled eggs over all. Stir the mixture, then cover. Let cook over medium heat, stirring occasionally to keep the eggs from sticking.

Once the eggs are set, crumple the bacon and spread it and the cheese over the top. Cover and let set for 5 minutes until the cheese melts. Remove from heat, then sprinkle chopped parsley over the top.
