Maple Syrup, Sausage, Sweet Potatoes, and Eggs… Oh My!

One of the great pleasures of RVing this time of year is taking advantage of some great cooler weather recipes. If you find yourself spending more time inside your RV than out, you will appreciate the great smells of a hearty breakfast.

Here is a terrific day-welcoming breakfast from your Oklahoma RV dealer. It is an awesome way to start your day on the road or even at home.

Sweet Potato With Maple Sausage and Eggs Hash

What could be better than maple syrup in the fall? Maybe some sweet potatoes? Some tasty sausage topped with eggs? Try this recipe and you get it all.

You will need 1 pound of peeled and chopped sweet potatoes, ½ pound of breakfast pork sausage, 1 tablespoon butter, 1 tablespoon EVOO, ½ onion, enough pepper to taste, and 1-2 tablespoons of maple syrup.

Put the sweet potatoes in a pot of boiling water and cook for about four to five minutes or until al dente. Drain and put aside.

Now brown the sausage and set it aside.

Heat up the butter and EVOO and then add the sweet potatoes. Sauté potatoes and onion until potatoes are brown and the onions are caramelized. This will take about 5 to 7 minutes. You then add the sausage and heat.

Your last step is to add the maple syrup! Heat thoroughly and serve. For a one dish meal, crack some eggs and add either as a side or directly on top of the hash. This is a rib-sticking breakfast or brunch you will want to have again and again.
