Mom’s S’more Mousse Pie

Many RVers we have met have told us of how their childhood memories of vacationing in the family motorhome, consisted of dad piloting the RV, while mom made it fun in the kitchen, creating simple but delicious treats with recipes she would save just for those outings. So, with Mother’s Day right around the corner, we wanted to share one of those treats. So, prepare yourself for deliciousness of Mom’s S’more Mousse Pie!

  • 2 cups of miniature marshmallows
  • 1 (7oz) milk chocolate candy bar
  • ½ cup milk
  • 2 cups heavy whipping cream
  • 1 (9 inch) graham cracker pie shell (baked)
  • ½ cup of graham cracker crumbs
  • Chocolate syrup

Firstly, have the bag of mini marshmallows nearby to munch on, so as to deter you from nibbling on the pre-measured marshmallows you will need for this recipe.

Let’s get started by heating 1-½ cups of marshmallows, the chocolate bar, and the milk in a saucepan over low heat, stirring constantly, until the marshmallows and chocolate are melted. Then, remove from heat and let it completely cool.

Next, pour the heavy cream into a large bowl, and with either a beater or a whisk, stir until thick. To check and see if it’s thick enough, simply lift the whisk/beater straight up. It should form little peaks.

Once the whipped cream is thick enough, take your chocolate and marshmallow mixture, and gently stir it in until it is fully combined. Then pour it into the graham cracker pie shell. Take your remaining ½ cup of mini marshmallows and the ½ cup of graham cracker crumbs, and sprinkle them evenly across the top.

Finally, drizzle chocolate syrup evenly across the top as well. The hardest part of this recipe comes after placing the pie in the fridge, and that is waiting the 3 hours it takes to set without dipping a fork or finger in to get yourself a “little” taste.
