Oklahoma RV Cooking: Casseroni

There’s one thing that almost all RVers can agree upon and that would be the joy of learning new things. This sentiment also applies to the motorhome kitchen. There is always some recipe that hasn’t been charted or an old favorite that can be tampered with for improved results. So now, with no further ado, we’d like to present to you a soon to be classic in the form of Casseroni.

  • 8 oz. of elbow noodles
  • 2 tbsp. of butter
  • 2 ¾ cups of milk
  • 2 ½ cups shredded sharp cheddar
  • ½ lb. hamburger meat
  • 2 ½ tbsp. of flour
  • ¾ cup bread crumbs

We’ll get started by multitasking. Fill a large pot with water and pour in the noodles once it starts to boil. You’ll want to make sure and give a few shakes of salt at this point and give the elbow noodles a good stir. The meat should cook along side the pot until it’s fully brown.

Now you can preheat the oven to 375°. After about 10 minutes of a rapid boil, the noodles should be ready to drain. Leave the noodles in the strainer and pour the flour in the pot and slowly stir in the milk on medium heat. Keep the momentum going until the sauce thickens. Put in a dash of salt and pepper, then the cheese and hamburger meat.

Place the noodles back in the pot and stir until everything is good and mixed in. Pour the whole mixture into a baking dish and sprinkle the breadcrumbs across the top. Bake for 25 – 30 minutes.

Now this one is sure to please all eaters traveling in your Oklahoma City RV, picky or not! Once you try Casseroni, be sure to let us know what you thought in the comments below!
