Pork Chops along with Roasted Apples and Onions

It’s the time of year for a little autumn leisure time. This is a great season to be an Oklahoma RV owner and to take advantage of cooler temperatures and some fall colors. It is also an opportunity to take advantage of some fruits and vegetables that come into season this time of year. Here is a recipe that uses apples to help bring in that fall feeling.

Pork Chops along with Roasted Apples and Onions

You will need 2 ½ teaspoons of canola oil

1 ½ cups of frozen pearl onions that have been thawed out

2 cups of apple wedges

1 T butter (divided)

2 t of fresh thyme leaves

1 ½ t salt (divided)

½ t black pepper (divided)

4 pork chops (bone-in and about ½ inches thick)

½ cups of chicken broth

½ teaspoons of flour

1 t of cider vinegar

First, preheat the oven to 400 degrees. Then add 1 teaspoon of the oil to an ovenproof skillet and heat over medium heat. Make sure the onions are dry and then add them to the skillet and cook them for about two minutes. Next add the apples to the pan and put the skillet in the oven and bake for about 10 minutes or until the apples are tender. Then put two teaspoons of the butter, the thyme, ¼ teaspoon of the salt and ¼ teaspoon of the pepper in and stir.

Heat another skillet over medium heat and add pork chops. Sprinkle the pork chops with the last of the salt and pepper and cook for three minutes on each side or until done. Remove the pork chops and keep them warm. Whisk the chicken broth and flour in a bowl and add this mixture to the skillet you browned the pork chops in. Make sure you scrape the bottom of the skillet to pick up the brown bits. Cook this mixture for about one minute or it is reduced to ¼ cup. Then stir in the vinegar and the last teaspoon of butter.

Now plate up the pork chops and apples and onions and drizzle the sauce over all. It’s a yummy dinner with a slice of fall inside!
