Shebang Dip

Being out on the road in your Oklahoma City RV can sure be draining, especially on long trips. One must not forget to refuel by getting in the kitchen and whipping up something delicious. As great as that sounds, the truth is, we don’t always have the time to enjoy the art of cooking. So, we share with you one of our favorite quick recipes that will be filling and leave plenty of time to exploration.

Shebang Dip

  • 1 ¾ cups of water
  • 2 cups of 5 minute rice
  • 1 can of water packed tuna
  • ½ cup of shredded sharp cheddar cheese
  • 1 bag of tortilla chips
  • ½ cup of salsa

Pour the water in a pot and bring it to a boil. Now, stir as you pour in the rice. Sprinkle small amounts of salt to reduce clumping. Let the rice simmer for 5 minutes once you reduce heat and cover the pot.

Ding! Now that time’s up, take the rice away from the burner but keep it covered. Let the water sink into the rice for another 5 minutes. Make sure to have a test bite before mixing in the rest of the ingredients to avoid crunchy rice. If it’s still a tad on the hard side, pour more water in and let it boil a couple of minutes.

Once you’ve decided the rice is of perfect tenderness, empty the drained tuna into the rice and stir. Follow immediately with the cheese while the rice is still steamy and it will melt over the tuna and rice. You don’t want to put the cheese before the tuna because it will not spread thoroughly in the rice.

Give the cheese a couple of minutes to warm up. Use this time to open up a bag of chips and get them ready for consumption. You might want to get a whole tray ready by placing a bowl in the middle for the dip and putting all the chips around it.

Back to the dip, pour in your salsa and give it another good stir. At this point it should be sort of sticky and that’s what you want. Now, let’s eat!
