Spring Road Trip Snacks


When you head out on a long road trip, the last thing you want to do is to stop just for a snack. You can pack road trip snacks to hold you over until it’s time to stop for a meal. While you may be tempted to pack chips, pre-made cupcakes and pies, you can go healthy instead, and still have high-energy snacks.

Cheese, Fruit and Veggie Bags

Make carrot and celery sticks. Add sliced apples and cheese cubes or slices. Make two or three bags for each family member. Fill small containers with peanut butter and your favorite dip. Keep everything in a cooler if you are hauling a travel trailer or fifth wheel, or keep them in the fridge if you are driving a motorized RV. Deviled Eggs

You can also make deviled eggs and keep them in a cooler or your RV’s fridge. Keep them in a sealed container to keep them fresh.

  • 2 eggs per person
  • Mayonnaise
  • Spicy brown mustard
  • Salt
  • Pepper
  • Cayenne pepper
  • Garlic powder
  • Onion powder
  • Paprika

Boil the eggs for 12 minutes. Run them under cold water. Peel the eggs, then slice them in half lengthwise. Scoop the yolks out into a bowl. Mash the yolks with a fork. Add about ½ teaspoon spicy brown mustard for each egg. Add enough mayonnaise to get the consistency you prefer.

Add spices except paprika to taste. A good starting point is about 1 teaspoon of each spice per dozen eggs. Scoop or pipe the filling into the egg whites. Sprinkle them with paprika. Store in an airtight container in the cooler or your RV’s fridge.
