Stay Cool with These No-Bake Desserts

Firing up your RV’s oven on a hot day can make the interior of your home on wheels a bit uncomfortable. But you don’t need to bake to enjoy delicious treats during the hot summer months. The following no-bake dessert recipes are all you need to satisfy your sweet tooth without turning on the oven.

No-Bake Key Lime Pie

Enjoy one of the tastiest treats of summer without spending the entire day in the kitchen.

What you’ll need:

  • 1 14-ounce can sweetened condensed milk
  • 1 6-ounce can frozen limeade concentrate (not thawed)
  • 1 cup heavy cream
  • Zest of one lime
  • 1 6-ounce graham cracker pie crust

Preparation instructions:

  1. Pour the condensed milk, limeade and cream into the bowl of an electric mixer. Beat the mixture until fluffy with the whisk attachment. Continue beating until soft peaks form.
  2. Pour the filling into the graham cracker pie crust and smooth the top of the pie.
  3. Refrigerate for roughly 4 hours or until the pie is loosely set.
  4. Sprinkle with lime zest before serving.

Coconut Snowballs

This sweet and tropical treat will help you cool down on hot summer days.

What you’ll need:

  • 1 gallon French vanilla ice cream
  • 2 14-ounce packages shredded coconut

Preparation instructions:

  1. Use a 1 1/2-inch scoop to make ice cream balls.
  2. Roll the ice cream balls in the shredded coconut.
  3. Place the coconut-covered ice cream balls in foil or in miniature muffin wrappers on a tray.
  4. Cover the tray with foil or plastic wrap and place it in the freezer until the ice cream balls are completely frozen.
