Think and Chunky Spaghetti Sauce

Many of us who love the RV lifestyle love to cook and keep our menus fresh and interesting. Sometimes it is not a matter of re-inventing the wheel, but just putting a new twist on an old standard.

Leisure Time RV, your Oklahoma RV Dealership, offers you this recipe that will add a little more spice and texture to your spaghetti dinner. It is our recipe for Chunky Vegetable Beef or Turkey Spaghetti Sauce that is perfect for fall RVing.

The ingredients you will need include:

1 lb. of your choice of ground beef or ground turkey

1 large onion

1 large green pepper

6 baby Bella mushrooms

1 medium carrot

1 medium celery stalk

2 tablespoons of crushed red pepper flakes

1-24 oz. jar of your favorite marinara sauce

Cut the onions into about ½ inch slices and cut into about ½ inch chunks. Cut the green pepper into ½ inch squares. Cut the mushrooms into 4 pieces each. Slice the carrot and celery stalk into thin slices.

In a large skillet brown the ground beef or turkey. As the beef or turkey begins to lose its pink color, add the cut chunks of onion and green pepper, along with the slices of carrot and celery. Stir in and cook for about 8 minutes until the vegetables begin to show signs of clearing. Add the chunks of mushrooms and cook for 3 or 4 more minutes, continuing to occasionally stir. Sprinkle in the crushed red pepper flakes and add in the marinara sauce. Stir until all ingredients are thoroughly mixed and the sauce begins to boil.

Serve this thick and chunky sauce over your favorite pasta, and top with some shredded mozzarella or parmesan cheese. Add a side salad and some garlic bread and you will have a hearty meal for 4 or more. If you want a vegetarian edition, simply eliminate the beef or turkey.

Oklahoma State Parks offer a variety of outdoor recreational activities for the RV lover and an amazingly diverse amount of sights and sounds. For those who own an Oklahoma RV, I thought it would be interesting to share of the information about our State Parks through a series of trivia questions. Feel free to try to answer these questions, see how much you know. You may even learn a thing or two!

How many State Parks are there in Oklahoma?

There are a total of 35 State Parks in the state.

The highest point in Oklahoma is located in this State Park.

Black Mesa is the highest point in the state and it is located at Black Mesa State Park and Nature Reserve. At 4,973 feet high, Black Mesa is located in the Northwest Panhandle of the state. There happen to be about 30 RV type camping sites at this State Park.

What appropriately named State Park gives visitors the opportunity to rent an ATV, or bring your own, to ride through its sand dunes?

That would be Little Sahara State Park in Waynoka. Jeeps and motorbikes are also popular ways to explore the dunes.

How long can one stay at an Oklahoma State Park?

Campers can stay up to 14 days at the same site, but depending on the season, the park manager could grant an extension.

Because of its emerald-tinted water and deep depths, what State Park is known for its water sports and has its own dedicated scuba diving park?

If you like water sports, Lake Tenkiller in Vian is the Oklahoma State park for you. Rocky bluffs and gravel shorelines are a big feature here.Yes, it actually has a separate area set aside for scuba diving!

Geocaching in Oklahoma

Geocaching is a world-wide open-air game that is played by using GPS-enabled devices that help you find or hide containers called caches. All you need to partake in this amazing and educational hobby is a free basic membership from and an app downloaded right to your smartphone. With this, you will be well on your way to finding hundreds of caches hidden right in your home state of Oklahoma.

A large piece of history happened in Oklahoma territory during the 1880’s; the Land Rush. The day of April 22, 1889 saw 50,000 eager people waiting to stake their claim on a piece of land. There were only 12,000 lots to be claimed so you can imagine the disorderly conduct citizens were putting themselves through. By the end of the day, over 10,000 people settled into the newly budding capital of Guthrie.

Fast-forwarding time and you now have a chain of geocaches that have been placed along familiar paths during the Oklahoma Land Rush. This series runs east to west, much as the settlers did well over 100 years ago. All of the caches placed along this route are deliberately not invading anyone’s land, so do not trespass while searching for any of these caches.

Also throughout the state are caches placed along the old Route 66. This famous highway has been torn down and Interstate 40 has now replaced this charming and scenic road. There are still sections visible so keep your eyes peeled while you are out and about.

February Events

January has passed of 2013 and we’re finally in February, the month that reminds us of love and happiness. What better way is there to show that special someone you care than to take them around town in your Oklahoma City RV? Well, there are plenty of opportunities to do just that! Here are some of our favorite activities coming up.

Valentine’s Dinner & Dance

Speaking of love, next week is that love-or-hate holiday that everyone has an opinion on. If you don’t have plans, this one’s for you! At the National Cowboy & Western Heritage Museum on 63rd street, there is an evening of dining and dancing from 6-10 on the 14th. Not only will your evening be full of elegance but art as well. The galleries will be open for your viewing pleasure to add uniqueness the night. Interested? Don’t wait to book! Reservations will be required so make yours today.

Born To This Land

One night only, step back into the Old West with the sounds of days past. To accompany the music there will be a slide show of an era by David Stoecklein and Bob Moorhouse. This concert will be held at the museum on the 22nd at 7pm.

Youth Expo

Including your children in events can be challenging, especially the teens. So, we found a way for you to share the love with the whole family by attending the Oklahoma Youth Expo. This annual event is the world’s largest junior stock show, which means there is something entertaining for all ages! This will also be held at the National Cowboy & Western Heritage Museum but unlike Valentine’s, it’ll be around until March 20th!

Football Toasties

Many fans across America are getting geared up for Sunday’s big game festivities. Watching two teams battle it out for the top honor in football is exciting but it surely works up quite a hunger. Once you invite over a crowd to the outdoor viewing party hosted in your Oklahoma City RV, there will be plenty of hungry guests to feed! Take the heat off the cook by making a simple yet filling food that will delight everyone. Here we present you Football Toasties.

  • 1 package of French garlic bread
  • 1 bag mozzarella cheese
  • 1 package of pepperoni

While you’re at the grocery store picking up ingredients, head over to the bakery. Most stores have ready-made garlic bread in aluminum bags that only need to be heated. These will work perfectly but it’s also possible to use the frozen kind or homemade.

Preheat the oven to 350°. Separate 10 slices of the French garlic bread and lay them out on two pans. Take a handful of mozzarella and make an even layer across each piece. Then, place 3 pepperonis on the individual toasts. Place both pans in the oven for 5 minutes. Once the buzzer goes off, let cool for 2 minutes. Serve and enjoy!

RV Tailgating

Cotton Bowl TailgatingA couple of week ago, we had the opportunity to travel about 4 hours south to the largest domed stadium in the world to watch a pretty important game in the college football realm. We’re talking about the Cotton Bowl game where Texas A&M was up against one of our favorite teams, the Oklahoma Sooners. While there we got to meet some interesting people, see some interesting RVs, and get a great view of Cowboys Stadium.

The Atmosphere

Cotton Bowl TailgatingIn our parking lot, there were quite a lot of motorhomes. Almost the entire space was A&M fan territory but a few Sooners fans held their ground. The tailgating process is more than playful jabs at the opposite fans. There’s a real brotherhood amongst those who camp out in support of their teams. The intoxicating aroma that filled the air reserved the best part of the experience. No matter where you went, you could inhale the slow-cooking meats that were being prepared for afternoon BBQ. That’s always encouragement to mingle!

Cotton Bowl TailgatingWhy stay cooped up inside before a big event? If you haven’t used your outdoor kitchen, tailgating would be the perfect reason to start! Being outside, you can be involved in the community feel of the tailgating. With everyone out and about, there are plenty of people to talk to and let sample what you’ve got cooking. Not only is everyone outside cooking, many are also watching TV from the outside set. More and more, RV manufacturers are making it easier to be connected to the activities you love while being outdoors and in the mix.

Even though our team did not take home the glory, we’re proud that they made it that far. Perhaps an incentive to those who did not grow up drinking tea would be to help on their resolutions for the year. If getting healthier or losing weight was on your list, this could be the drink for you!
