Treat Yourself on the Road!

Cooking on the road doesn’t have to be a chore. In fact, you can enjoy your favorite sweet treats on the road without having to cut into your time outside adventuring.  These easy 15-minute desserts that require no baking at all are all you need to treat yourself (and your fellow campers) on the road.

Berry and Ice Cream Shortcakes

What you’ll need:

  • 1 cup raspberries
  • 1 cup blueberries
  • 2 tablespoons sugar
  • 2 tablespoons orange juice
  • 4 split biscuits
  • 1 pint vanilla ice cream

Preparation instructions:

  1. Toss the raspberries, blueberries, sugar and orange juice together in a large bowl. Let it sit for five minutes.
  2. Serve the four split biscuits on four separate dishes and divide the pint of ice cream evenly among them. Pour the berry mixture evenly on top and enjoy.

Raspberry Sorbet and Whipped Cream with Meringues

What you’ll need:

  • 1 cup heavy cream
  • 16 small meringue cookies
  • 2 tablespoons confectioners’ sugar
  • 2 pints raspberry sorbet

Preparation instructions:

  1. In a small bowl, whip the cream and sugar together until soft peaks form. Set the whipped cream aside.
  2. Break the cookies into pieces with your hands. Do this over a medium size bowl to catch all of the pieces.
  3. Scoop the sorbet evenly into eight dishes and spoon the whipped cream evenly over each dish. Sprinkle 2 tablespoons of the crumbled meringue cookies on top.

Fruity Ice Cream Cups

What you’ll need:

  • 4 cups vanilla ice cream
  • 2 cups fruit-flavored sorbet

Preparation instructions:

  1. Prepare four small paper cups. Place 1/2 cup vanilla ice cream in each cup, then layer 1/2 cup fruit-flavored sorbet on top.
  2. Place another 1/2 cup vanilla ice cream on top of the sorbet.
  3. Freeze each ice cream cup until firm (for at least 10 minutes)
