Mason jars are a handy way to store plenty of items inside your RV — even your meals. In fact, preparing portable meals in Mason jars has become a trend that’s great for picnics, work days and all of your RV adventures. These delicious Mason jar recipes are ones that will become staples for your life on the road.

Patriotic Parfaits

What you’ll need:

  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tablespoon fresh lemon juice
  • 1 cup heavy cream
  • 1 cup blueberries
  • 2 cups strawberries
  • 1/2 cup shredded coconut
  • 10 ounces angel food cake
  • 8 Mason jars

Preparation instructions:

  1. Stir the sugar and water together in a 1-quart saucepan until boiling. Stir occasionally, then add the blueberries and the lemon juice.
  2. Remove the mixture from the heat and let it cool.
  3. In a separate large bowl, whip the heavy cream with a mixer on medium speed. Whip until soft peaks form, then fold the whipped cream into the cooled blueberry mixture.
  4. Layer your Mason jars with angel food cake on the bottom.
  5. Top with 2 tablespoons of strawberries, then 2 tablespoons of blueberry whipped cream. Repeat with all jars.
  6. Top with 1 tablespoon of shredded coconut.

Layered Chicken Salad with Coriander-Yogurt Dressing

What you’ll need:

  • 1/4 cup fat-free plain Greek yogurt
  • 2 additional tablespoons fat-free plain Greek yogurt
  • 1 tablespoon dill
  • 1 1/2 teaspoons coriander seeds
  • 1/4 tablespoon extra-virgin olive oil
  • 2 additional teaspoons extra-virgin olive oil
  • 4 roasted red bell peppers
  • 1 pound mixed tomatoes
  • 1 rotisserie chicken
  • 2 avocados
  • 1 cup mixed herbs (parsley, tarragon, basil and dill)
  • Salt and pepper to taste

Preparation instructions:

  1. Combine the yogurt, coriander and dill with 3 tablespoons of water in a large bowl. Whisk the mixture until smooth.
  2. Whisk in the oil slowly. Season with salt and pepper.
  3. Layer the ingredients equally in four jars.
  4. Serve with the yogurt dressing.

No-Bake Raspberry Cheesecake Jars

What you’ll need:

  • 1 1/2 package cream cheese
  • 1 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons granulated sugar
  • 8 graham crackers
  • 1/2 cup raspberry jam
  • 12 ounces fresh raspberries
  • 8 Mason jars

Preparation instructions:

  1. Use an electric mixer to beat the sugar and cream cheese together until the combination is smooth.
  2. Slow the mixer speed to low and add the heavy cream to the mixture.
  3. Increase the speed back to high and beat the mixture until it is thick and stiff. It should take roughly 2 minutes.
  4. Beat in the lemon juice.
  5. Place the graham cracker crumbs in the bottom of each jar, then top the crumbs with a layer of cheesecake batter, raspberries and raspberry jam. Alternate each layer with a layer of batter.
  6. Refrigerate your cheesecake jars for at least 2 hours before serving.

Easy Taco Salad

What you’ll need:

  • 1/4 cucumber (diced)
  • 1/2 cup black beans
  • 1/4 cup corn
  • 1 Roma tomato (diced)
  • 1/4 cup red pepper (diced)
  • 3 cups greens
  • 1 tablespoon shredded cheddar cheese
  • 1/4 avocado (diced)

Preparation instructions:

  1. Place your favorite southwestern salad dressing in the bottom of the Mason jar.
  2. Layer the ingredients with the cucumbers on top of the dressing, then the black beans, diced tomato, corn, red pepper, greens and avocado.
  3. Top with the shredded cheddar cheese and secure the lid. This salad can be stored in the fridge for up to five days.
