Yummy Summer RV Recipes


Summer is almost here, and that means its time to fire up your RV and prepare for those long nights outside at the campsite. These summer recipes are easy to cook inside your compact RV kitchen, and they offer a tasty alternative to your traditional burgers and hot dogs.

Summer Shrimp and Potato Salad

What you’ll need:

  • 10 large baking potatoes (scrubbed)
  • 3 bunches green onions (chopped)
  • 12 eggs
  • 1 can shrimp (4 ounces)
  • 6 dill pickles (chopped)
  • 1 can small shrimp (4 ounces)
  • 2 tablespoons celery salt
  • 2 tablespoons paprika
  • 2 cups low-fat mayonnaise
  • salt and pepper to taste

Cooking instructions:

  1. Boil potatoes in a large pot until soft. Set aside to cool.
  2. Peel potatoes and cut into bite-size pieces.
  3. Boil eggs in a saucepan for one minute. Cover the pan, remove it from heat at let the eggs sit in the hot water for 12 minutes.
  4. Let the eggs cool, peel and chop.
  5. Combine the eggs, potatoes, onions, cans of shrimp and pickles in a large bowl. Stir in the mayonnaise, paprika and celery salt.
  6. Season with salt and pepper to taste, then chill for two hours before serving.

Penne in Tomato Vodka Sauce

What you’ll need:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 cup vodka
  • 1 onion (chopped)
  • 1 can peeled and diced tomatoes (28 ounces)
  • 1/4 teaspoon crushed red pepper
  • 1 pound penne pasta
  • 1 cup heavy whipping cream
  • salt and pepper to taste

Cooking instructions:

  1. Heat a large skillet over medium heat and melt the butter with the oil. Stir in onion and saute until soft.
  2. Add tomatoes and cook for 25 minutes until thick.
  3. Turn up the heat and stir in the vodka, cream and red pepper. Boil for two minutes and season with salt and pepper.
  4. Boil the penne until it’s al dente.
  5. Drain the pasta and pour the simmered sauce on top.
